Yesterday, I really thought outside my culinary box. I cooked pigeon. That's right, pigeon. I know what you are thinking, and it wasn't anything like the pigeons in say, New York.
These were seriously big country pigeons, like the size of ducks.
The Squid had a co-worker that was kind enough to share some of his pigeon with us, cleaned, de-boned, and ready to cook.
Here are the 8 breasts that were given to us, before I cooked them.
Here they are as I cooked them. I coated the pan with butter and seasoned the breasts with salt, pepper, garlic powder, and basil. I read over and over to serve them rare to medium rare, so I just seared them for a few minutes on each side.
As far as taste goes, amazing! It tastes just like steak! Weird right?!?! Now I know why Jamie Oliver has fooled people into thinking his pigeon sandwich was a steak sandwich. It is so good!
Wondrous enough our squidlets loved it...never mind I told them it was chicken.

I am so grateful that The Squid has such generous co-workers!
